I recall my first paella. It was in Granada, Spain during my college study abroad semester. I helped my house mother shop for it and cook it so I know how many steps are involved in making a great one. This Atlantic Catch Paella ($34) at Eve’s at the Garden is perfectly cooked with generous portions of Grilled Calamari, Cod Loin, Little Neck Clams, Grilled Chorizo, and Valencia rice. Each component perfectly seasoned and cooked to bring out great flavors that combine to make a great dish. Very savory. Very good.
I paired a glass of 2012 Cloudy Bay Sauvignon Blanc ($14) with this one at the restaurant. Cloudy Bay Sauvignon Blanc is considered one of New Zealand’s and one of the world’s finest expression of Sauvignon Blanc. If cooking at home, try a nice Spanish white such as a nice Godello, Verdejo, or Albarino.
