Fish Tacos and Sauvigon Blanc are pretty much a ‘no fail’ great pairing. The Blackened Whitefish Tacos with Crispy Gorditas, Pico de Gallo, House Pickled Slaw, and Guacamole paired with the 2012 Sincerely Sauvignon Blanc, at Sonny’s in Portland, ME is no exception. The tortillas or ‘Crispy Gorditas’ as they were called are thick and full of great flavor.
The whitefish portion is generous and the blackened seasoning adds an extra kick of heat and layers of flavor. The house made creamy and chunky guacamole and pickled slaw were perfect touches – adding more layers of flavor, freshness, and the pungent acidity from the slaw laid the bridge for the 2012 Sincerely Sauvignon Blanc from Western Cape South Africa. The 2012 is well balanced in itself – not too herbaceous, pungent, or overpowering in aromas or taste as some sauvignon blancs can be… allowing all the aromas and flavors of both the grape variety and the fish taco to shine through.
