Join Wine Wise at Falmouth Country Club for an elegant evening inspired by the flavors, wines, and culinary traditions of Mediterranean countries such as France, Greece, Italy, Lebanon, Morocco, and Spain. This special wine dinner brings together beautifully prepared cuisine and thoughtfully selected wines for a refined yet convivial night of dining. Price includes food and beverage, tax, and service per person.

Guests will enjoy a four-course dinner influenced by the diverse cultures and cuisines of the Mediterranean, featuring flavors and techniques drawn from across the region. Expect vibrant herbs, coastal freshness alongside beautifully prepared meats such as beef or lamb, depth of flavor with warm spices, and beautifully balanced dishes designed to shine alongside the wines. Each course will be paired with a quality-focused wine chosen to complement and enhance the dish, highlighting the natural harmony between Mediterranean cuisine and wines, where freshness, acidity, and texture take center stage.

Hosted in the warm, beautiful, and inviting setting of Falmouth Country Club, this dinner will feature Wine Wise wine pairings presented with insight and context, offering guests a deeper appreciation of how regional wines interact with the food on the table.

A proud Mainer, Falmouth Country Club’s Executive Chef Tim Labonte brings a passion for creating innovative and unexpected meals featuring the finest locally-caught seafood and peak seasonal ingredients. With over two decades of culinary expertise and a deep appreciation for Maine’s vibrant food culture, Labonte delivers exceptional dining experiences that celebrate both tradition and creativity.

Chef Labonte earned his culinary arts degree from Johnson & Wales University in 1999 and began his career as a sous chef at the Key West Hilton Resort & Marina. His career flourished as he took on prominent roles, including Executive Chef at the Ocean Key Resort & Spa in Key West and Regional Executive Chef for Hart Hotels, overseeing premier properties such as Portland Harbor Hotel, Inn at Diamond Cove, and Diamond's Edge Restaurant. As Corporate Chef for Dennis Foodservice, Labonte developed his marketing expertise, crafting culinary solutions and fostering industry innovation.

Currently, as Executive Chef at Falmouth Country Club, Labonte leads with a commitment to excellence, creating menus that delight members and guests alike.

Labonte’s passion for travel has taken him across the globe—from Italy and Spain to South Africa and Greece—where he immerses himself in local cultures, cuisines, and breathtaking landscapes. His culinary style reflects these global influences, bringing international inspiration to the table.

When he’s not in the kitchen, Labonte channels his creativity through photography as the founder of My Left Eye Photography, an online print store and photography service. His eye for photogenic moments parallels his talent for crafting visually stunning and flavorful dishes.

Chef Labonte’s journey is a testament to his dedication, artistry, and love for connecting people through food and experiences, both in Maine and beyond.

Your Sommelier
Archer is a true oenophile, having obtained high levels of certification in her field. In 2010, she was awarded the Wine Spirit and Education Trust Level Three Advanced Certification in Wines and Spirits (with merit), became a Sommelier in the American Court of Master Sommeliers, and received her Certified Wine Professional award from the Culinary Institute of America in St. Helena, California. Erica is the principal of Wine Wise, a wine education and events service. She is skilled at creating truly creative and memorable wine experiences that take guests beyond a typical tasting with her intimate understanding of what makes each wine unique. And she’ll do it with her trademark down-to-earth style.
