At four different locations we'll sample a Bourbon, discuss their uniqueness, similarities, production processes, and regional influences through tasting and discussions that will build your knowledge of Bourbon. Then some of the city's most esteemed bartenders will teach you how to make a great balanced cocktail from that Bourbon and share a few cocktail-making tips and tricks that you'll love to have in your repertoire.

Your Chef
Paolo Laboa’s journey started in his mother's kitchen, where he learned the secrets of real Genovese cooking, the pinnacle of Northern Italian cuisine. Every ingredient chef Paolo touches is fresh from the farm and sea to his kitchen to your table. Some of his favorite farms are Stonecipher Farm, Dandelion Springs Farm, Valley Farm, Olivia’s Garden for greens, vegetables, basil and herbs, and Northspore for foraged mushrooms. Fresh fish is brought in each day through Upstream, Harbor Fish Market or Browne Trading Co. Also sourcing other proteins like wild rabbit from Sumner Valley Farm and lamb and pork from Two Cove Farm, while dairy comes from a variety these local farmers. “Cooking is what I love and I want each ingredient to sing. Simplicity is my goal. If there are five ingredients, I want you to taste all five of them.” Breads and pastas are all made in-house from scratch using traditional Genovese recipes. “It is very important–the food that you eat,” says Laboa.

You'll be joining Sommelier Erica Archer on the gorgeous 74-foot gaff-rigged topsail sloop, Frances, that was built by her Captains and crew on Portland's waterfront. for a guided wine tasting and discussion on,what many consider one of the greatest white wines regions of the world, Burgundy, France. And we'll pair each wine with a selection of fresh Maine oysters shucked right on board as you sail through Maine’s beautiful Casco Bay with scenic views of Maine coastline, lighthouses and islands .... all while indulging in a wine class.

Sommelier Erica Archer will host a group of ten Falmouth Country Club members on an incredible 6-day trip to the world-renowned wine region of Burgundy, France October 27-November 1, 2019 with an arrival night in Paris included on October 26.

This is a exclusive and truly rare opportunity to travel to one of the most sought after and complex wine regions in the world, with a sommelier by your side taking you to highly coveted wineries and the unforgettable wine and dining experiences, architecture, art, and markets that the region has to offer. You’ll be learning a lot about the art of wine appreciation from a great teacher. Book early, as space is limited. ***There are 6 spaces left.***

Accommodations
Five of the six nights in Burgundy will be spent in Domaine de Cromey, a six-bedroom (all en suite) private château located 30 minutes south of Beaune, France. Cromey’s personal chef will cook breakfast each morning, accompany visitors on a tour of the Dijon market and prepare incredible dinners, exclusively for the group.

Day 1 – Saturday, October 26 | Paris Arrivals
Travel to Paris on your own and arrive at our hotel for a 3pm check-in. Enjoy some free time in Paris or rest. We’ll meet in the hotel lobby at 6pm and make our way to a wine reception and group dinner.

Day 2 – Sunday, October 27 | Paris to Burgundy
Depart Paris at by car at 8am, lunch in Chablis, arrive at Cromey for check-in, a sparkling wine reception, tour of the grounds, introduction, overview of week and a Wine dinner at Cromey prepared by our on-site private Chef.

Day 3 – Monday, October 28 | Côte de Beaune

We'll send an email to attendees the Wednesday before the event announcing the starting location and all the establishments that we'll be visiting. Please arrive 5-10 minutes before our start time. Please refer to our FAQ page for answers to questions that you may be wondering about.

Cancellations/Reschedules/No Shows
Because of our size, cancellations affect us significantly. If we are able to re-sell your tickets we can refund your ticket price minus the $10.00 credit card transactions we have to pay OR reschedule you to a different date that has availability (there is no credit card transaction fee in this case). You are always welcome to send a friend or family member in your place or sell your own tickets. Just make sure we have the ticket holder's email address so we can send them the event notifications so they are aware of where to find us and any day-of weather related notifications. There are no refunds or reschedules for no shows or if we are not able to resell your tickets. Makes sense, right?

You'll walk away knowing how regional influences impact wine styles and quality, gain confidence in knowing how evaluate, select, serve, and pair wines, and describe what you smell and taste.
